The only place I know in the US is run by Dr. Joel Fuhrman on the East coast. Perhaps he knows of other clinics in your area. I believe that he does run sessions in other parts of the country. In fact, you just missed one:

He will advise you to first go on an optimal diet that is a low-fat whole plant based diet. You need to eat healthy before and after the water fast. Otherwise, you will simply regain the weight you lost during the fast.
